For commercial purposes, ginger crops are mainly distributed in India, China, Nepal, Indonesia and Nigeria. In 2013 alone, the world production of ginger reached and exceeded 2.1 million tons. Various varieties of ginger are widespread in the countries of origin, while for the cultivation of ginger in Italy we must be satisfied with the cultivar that best suits our climate.

The ginger plant does not tolerate temperatures below 10-15 ° C well, even when it resists lower temperatures, it does not develop a fleshy and good quality rhizome.

The only solution for those who want to grow ginger in the open is to set up a greenhouse.

Given the climatic needs of the plant, it is preferable to grow ginger indoors, on the balcony or in sheltered locations in the garden. Place the ginger root in a pot and cover the soil with a layer of mulch.

Where to buy a ginger root?
Buy the classic ginger rhizome that you use in cooking or for natural remedies, from here you can get the first sprouts. The only condition is to buy the rhizome in a shop that sells only organic products because the ginger roots you find at the supermarket are often treated with substances that prevent them from germinating.

Once you have an organic ginger root, keep it in a ceramic container, indoors, at room temperature. A first sprout should start to develop within a few days. When germination is complete, cut the rhizome about 3 cm away from the shoot with a sterile and sharp knife. From a single root you can get more ginger plants than there are sprouts present!

Ginger, growing in pots

Prepare containers at least 40 cm wide and at least 30 cm deep. In each pot, arrange two pieces of root planted at a distance of about 15 - 20 cm from each other.

The pot should be filled 50 percent with fully mature compost and the other half with a mixture of clayey-sandy soil (medium-textured). If you are not sure about the drainage qualities offered by the soil, arrange a couple of cm of expanded clay on the bottom of the pot: ginger hates water stagnation!

The ginger sprouts should be buried about 5 cm deep with the green tip facing upwards. Irrigate the plant a few hours after planting.

The jars with ginger should be kept in a slightly shaded position where the sun gets filtered in the hottest hours of the day. Thereginger plantit will begin to develop when the temperature of the soil stabilizes constantly around 22 - 25 ° C.

Thegingerit should be irrigated daily for the whole vegetative period (until you notice green leaves on the plant). In late autumn, when the leaves start to fall, it will be possible to harvest the rhizome. The collected rhizome can be eaten fresh or after drying.

On average, approximately eight or nine months will pass from the planting of the sprout to the first harvest, depending on the seasonal climate.

The photo above shows a ginger plant in bloom… everyone loves blooms but beware! If the ginger plant blooms, eliminate the flower because it will subtract nutritional elements from the rhizome which will be less developed and with a less intense flavor.
